Eggplant, or aubergine as it is called in France, Have a rich purple gloss exterior. Eggplants belong to the nightshade family of vegetables, also in this family are the tomatoes, capsicum and potatoes. Eggplants are grown in a similar fashion to tomatoes, hanging from the vines of a plant that grows several feet in height.
The name eggplant comes from a North American variety of the fruit that has an eggshaped bottom. The exterior is a shinny black/purple , while the flesh is cream colored and spongy in consistency.
