Cup mushrooms are common white mushrooms (agaricus bisporus) picked just as their veil or underside begins to open around the stem. They are deeper in colour than button mushrooms, which are also a common white mushroom, but picked earlier than flat mushrooms. Cup mushrooms are over 35mm.
Cup mushrooms have a full-bodied flavour and firm texture.
Mushrooms are a good source of folate and B vitamins, and are also one of the few natural sources of vitamin D.
