CUP mushrooms are basic white mushrooms (agaricus bisporus) picked pretty much as their shroud or underside starts to open around the stem. They are deeper in colour than catch mushrooms, which are likewise a typical white mushroom, yet picked sooner than level mushrooms. Mug mushrooms are in excess of 35mm.
