Continental, flat leaf or Italian Parsley is the same species as Curly or Aussie Parsley – Continental Parsley has a more robust flavour and the leaves are larger and flatter. The Continental Parsley is most popular in Southern Europe, the Middle East and North Africa.
In Italian kitchens continental parsley is by far the most popular in Southern Italian dishes. Although not frequently used in cream based sauces, continental parsley is generally used in most other dishes including pasta sauces, seafood and vegetable sauces in particular.
Continental Parsley is a perfect accompaniment to chiili dishes as it soothes the powerful flavours.
Although often used in dried form, parsley is always at it’s best fresh.
