Celeriac or celery root, is supplied to Melbournes leading Food Venues by Simply Fresh Fruit, it has a roundish form and is rough and gnarled in appearance. It has long green stemmed leaves. It is the root that is eaten. Beneath the rough brownish exterior there is white flesh with a crispy texture. with a taste not unlike a mixture of celery and parsley. Celeriac is eaten both raw, in a similar manner to celery, and cooked. Celeriac is available between March and December. You can serve it raw in salads, boiled or steamed on its own, or add it to soups and casseroles.
To Store Celeriac
Store celeriac in the fridge for up to 1 week.
To Prepare Celeriac
Fill a bowl with cold water and lemon juice then cut away any bumps from celeriac. Peel celeriac, transferring pieces to lemon water as you go, to prevent discolouration.
